Mid-State Technical College launches Mid-State Meat Market: A new public-facing store showcasing student craftsmanship

November 13, 2025

Mid-State Technical College proudly announces the opening of the Mid-State Meat Market, an exciting new venture where the public can purchase premium meats crafted with skill and care by students in the College’s meat cutting and butchery programs.

The Mid-State Meat Market offers a selection of handcrafted specialty meats and old-world style sausage products that reflect the precision and artistry taught in Mid-State's classrooms.  Each item is an example of the College’s focus on quality, safety and applied technology.  The retail store gives students a space to use their creativity to produce limited time products and learn the art of recipe creation, as seen with their current offerings of pumpkin spice brats and potato sausages.

“At Mid-State, we’re proud to blend education with real-world experience,” said Dr. Alex Lendved, dean of Mid-State’s Marshfield Campus and School of Applied Technology. “The Mid-State Meat Market not only provides our students with invaluable industry training but also connects our community to the exceptional craftsmanship and quality that define our programs.”

Students in Mid-State's Meat Cutting and Butchery and Meat Processing and Retail certificate programs gain practical experience under the guidance of a Master Meat Crafter, learning the full spectrum of meat processing—from breaking down pork, lamb and beef into precision cuts to producing popular specialty items like sausages and snack sticks. In the new Advanced Meat Cutting and Butchery technical diploma program, students expand on foundational skills to master advanced processing techniques, product development, and quality assurance practices. Each program emphasizes hands-on experience and technical knowledge, equipping students with the expertise to succeed in Wisconsin’s growing meat industry.

“I’m incredibly proud of our students and the dedication they’ve shown in developing their craft,” said Adam Schlafke, Master Meat Crafter and instructor of Mid-State’s meat cutting and Butchery programs. “It’s exciting to share their hard work and unique, handcrafted products with the community. Every item that leaves our market represents their passion, skill, and commitment to quality.”
