Cooking Series

Beginning in September, Mid-State Technical College is offering a series of continuing education classes to elevate your cooking skills to a whole new level with a focus on healthy, flavorful, and cost-conscious eating. Award-winning chef Scott Keller will teaching basic knife skills as well as how to use recipes as guidelines when preparing salsas, salads, and soups. In each class participants will prepare—and eat—great food!

To register:
Browse the class descriptions below, and locate the class number for the class(es) you'd like to take. Then choose one of the following registration options:

  • Phone – Complete and submit the online registration form. Then call our main number at 888.575.6782 and state that you have just submitted your registration for a class and would like to pay by credit card. Provide your credit card information, along with the class number and fee amount for the class. (Visa, MasterCard, and Discover accepted.)
  • Mail – Complete and print the online registration form, and mail it along with your check for payment to the campus office at any Mid-State location. (This payment option is described within the form, in section 5).
  • In person – Complete and print the online registration form, and bring it with your payment to the Mid-State campus office nearest you.

SalsaSassy Salsas

Who doesn’t like salsa? But the options available on store shelves tend to be variations on a theme of tomatoes with a kick of chili peppers. Forget about store-bought jars and think beyond the tomato because, this class will be a salsa party!

Yes, tomatoes will be part of the class with fresh pico de gallo on the menu, but you will also explore green and fruit salsas: think tomatillo, cucumber, peach and pineapple, cherry, or maybe mango salsas. We will talk salsa basics and with additions of onions, peppers and garlic—your taste buds will be dancing. And we won’t forget the chips and guacamole!

From the garden to the plate! Are you tired of limp lettuce and soggy spinach? Would you rather not be faced with the sharp aftertaste of an overdressed, overcooked pasta “salad?” Salads made with nutrient rich, fresh, seasonal vegetables and accented with freshly made dressings and toppings can be an easy,  healthy, and delicious part of your everyday diet.

This class will give you tips for creating tossed and pasta salads that can be easily changed up according to available ingredients. Also learn techniques to make three basic dressings at home, and learn how your salads can dress to impress!

As the weather moves into the frosty nights and shorter days of autumn, the earth reminds us that this is the time for eating squash, potatoes, and hearty greens. Whether it’s because of the cooler temperatures or we’re just feeling unwell, the warmth of soup can provide comfort that can help us feel better. In this class you will prepare and sample two seasonal soups and discuss making stock from scratch.
